Must Try Corn Pie

I am quite sure many like myself  many of you have tried a number of corn pie recipes that did not do justice to the name "Corn Pie"! I came across this recipe four months ago and I gaurentee this is the only recipe you will stick to for the perfect corn pie.

Recipe: Serves 5-6
Ingredients:
1 15 ounce Canned Corn
1 Large egg
½ cup corn meal
4 tablespoons butter
Chive (chopped)
½ cup diced onion
1 bell pepper/Pimentos (green or red diced)
1 teaspoon or more salt
½ teaspoon scotch bonnet pepper or cayenne pepper (optional)
½- 1 canned evaporated milk (depending on texture)
2 Tablespoons parsley
1 cup sharp cheddar cheese divided
2-tablespoon sugar (optional)

Instructions:

Preheat oven to 350 degrees F. Grease casserole bowl and set aside

Strain water from corn and place liquid into a bowl . Measure the liquid into 1 cup , if it does not measure 1 Cup add enough water to fill it. Return the water into the bowl, followed by egg and corn meal, mix thoroughly and set aside.
With a  sauce pan/pot on medium heat melt butter, next then add green onion, bell pepper/pimentos, onion, salt and black pepper (optional), then stir for about 2-3 minutes or until tender.

Then add the milk bringing to a boil, quickly add the cornmeal and egg mixture to the sauce pan/pot reducing heat to low. Cook for about 4 minutes stirring frequently to prevent any burning or sticking.

After 4 minutes add corn and continue cooking for an additional 5 minutes until the mixtures comes easily away from the sides of the pot.

Add ½ cup cheese, parsley and sugar, mix well .

Transfer the mixture into prepared casserole, top with remaining cheese and bake until top is lightly brown about 30-40 minutes and the cheese is golden brown and bubbly. This can also be cooked in a convection oven.

When you try this tell me it i
s not one of the best corn pie you ever tasted?
