Rainbow Supreme Cookies

This was done for Easter 2015 as treats for nieces and nephews, using a "Classic Spritz" recipe I discovered on wilton.com. However, any cookie recipe of your choice can be substituted and decorated for the same finish. 

Recipe: Makes 7-8 dozens

Ingredients:

1 1/2 tsp Clear Vanilla Extract (Dark Extract can be substituted) 
3 1/2 Cups All Purpose Flour
1 Teaspoon Baking Powder
1 1/2 Cups Butter
1 Cup Granulated Sugar
1 Egg
2 Tablespoons Milk 

Instructions: 

Step 1
Preheat oven to 350 degrees.

Step 2

In a bowl combine flour and baking powder, set aside. In a large mixing bowl beat butter and sugar with mixer until light and fluffy.  Add egg, vanilla extract and mix well. Gradually add the flour mixture to the butter mixture and beat until well combined. Attach desired patterned disk and fill cookie press with dough. Press cookie dough mixture onto ungreased cookie sheet.

Step 3
Bake 10-12 minutes or until edges are light golden brown. Cool 2 minutes on cookie sheet before removing/serving.


DIY Coloured Sugar Crystals:

Ingredients:
4 Ziploc Bags
2 Cups Granulated Sugar (Divided 1/2 Cup to each bag)
3-4 Food Colours 

Instructions:
Divide granulated sugar (1/2 cup) to each bag, then using a toothpick/edge of a plastic spoon carefully place a dot of desired colouring into bag with granulated sugar. Seal the Ziploc bag ensuring all the air is removed and begin gently massaging the colouring into the sugar grains until evenly distributed.  

Repeat this process for each bag using different colours, this process takes some patience so if you plan on taking on this project ensure you have the coloured sugar crystals prepared at least 2 days in advance if you intend on going the extra mile to decorate your cookies. 

NB: If you desire a lighter or darker shade you may want to add less/more food colouring as necessary, being mindful not much is needs to attain such. Although for these particular cookies you would want a more brighter rather than darker colour for decorating. For this recipe gel food colouring was used. 


Icing Recipe:
1 1/4 Cups Confectioners Sugar
3 Tablespoons Milk
1/2 Tsp Vanilla Extract (clear/dark)

Instructions:
In a medium bowl add sugar and milk and combine well, add vanilla extract.

For Final Touches:
After cookies have been thoroughly cooled, placed desired colour sugar crystals in separate bowls. It is best to use a small amount at a time reserving the remaining in ziploc bags. Have a clean tray to place decorated cookies for drying.

Carefully press cookie into icing just to cover the surface of the cookie. Hold icing over bowl a few seconds to drain any excess incing. Next dip cookie into desired colour sugar crystal, for the rainbow effect seen in the photos I used a paint brush to brush the icing in parts then sprinkling desired colour sugar crystal as I went along. Shake off any excess sugar crystals into a separate bowl, if using multi colours for decorating. 

The bowl containing all excess sugar can also be reused, these make for a pretty rainbow mix of sugar crystals. I believe you should use every bit of ingredient you can without having to waste it. 

Feel free to be creative at this point, the options are limitless when decorating your cookies.
