Appetizers with a Healthy Twist
Recipes posted have been personally prepared by the author of the blog and pictures of such posted. Suggestions as to how certain ingredients or techniques can be altered in preparing these recipes are also included to make the process much easier.
Cauliflower Pizza Crust
Cauliflower Pizza Crust
Ingredients:
1 small to medium cauliflower head (must yield 3-4 cups after processing)
1/4 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/4 cup shredded Parmesan cheese ( I used crumbled)
1/4 cup mozzarella cheese (cheddar cheese can be substituted)
1 egg
1 tablespoon of almond meal (processed almonds)
Tomato sauce
Parchment Paper (Important)
Instructions:
Place pizza sheet or pizza stone in preheated oven of 450 degrees. Wash and dry a small head of cauliflower, trimming off mostly the florets and discarding the stems. Place in a food processor and pulse until fine, about 30 seconds, this should give about 2-3 cups.
Next place the processed cauliflower in a microwave safe bowl and lightly cover. Microwave for 4 minutes, leave to completely cool then place cooled processed cauliflower into a cheese cloth/fish towel and squeeze. Ensure you squeeze as much of the liquid as possible.
After the above step has been completed add 1/4 cup of mozzarella cheese/cheese of your choice, 1/4 teaspoon of salt, 1/2 teaspoon dried basil, 1/2 teaspoon garlic powder. If your cauliflower does not add up to 3 cups add some almond meal to make up the difference. Finally add egg and mix thoroughly.
Once combined used hands to form a crust on oiled parchment paper (this is very important). Press down firmly to form an even crust and be sure not to make the crust to thick. Slide the pizza crust onto the pizza stone or baking sheet baking for 8-11 minutes until crust looks golden brown.
Add your ingredients and place back into oven for an additional 5-7 minutes. Be sure to let cool for 2 minutes before attempting to cut and serve. Enjoy!!
