French Toast with Cream Cheese and Blueberry Jam

This particular item is something I can enjoy over and over with my children and is probably one of the few things I prepare for them that I do. Usually their comment would be "mummy why do you make all these nice things but you don't eat"? I know when persons reach a particular age calories and weight goes hand in hand and that many try to maintain a healthy lifestyle. With this in mind a few variations of this French Toast will be provided.

For this recipe I have used our local kiss sandwich loaf and even the whole wheat for a healthier option, if there is such a thing for French Toast! Nevertheless I find the whole wheat holds up better when soaked in the liquid mixture. 

For the all the health conscious, I have recently experimented using Ezekiel 7 Grain Sprouted Bread and let me tell you that the sky's the limit when you love to cook.  These breads are available in different flavours (cinnamon and raisin, sesame seeds and low sodium). It can be kept frozen until ready to use. However, once you will use it regularly I recommend leaving it out of the freezer section this way it take less time to toast/microwave.



Recipe: 2 servings

1 Egg
1 Tsp Vanilla Extract
1/2 Tsp Ground Cinnamon
1/4 Cup Milk (Low Fat/Almond/Preferred Choice)
4 Slices of Bread (White/Whole Wheat/Ezekiel)
2 Tablespoons Butter 


Filling:

4 oz of cream cheese room temperature (1/2 of 8 oz package)
2-3 Tbs Icing/Confectioners Sugar
Flavouring (Optional)
2-3 Tsp Milk

This cream cheese filling is ideal for pairing with your french toast!

Homemade Blueberry Jam

1 1/2 Cups Blueberry (fresh./frozen)
1/2 Cup Sugar
1 1/2 - 2 Tbs Lemon Juice (Fresh/Bottled)

Instructions:

Place Blueberry, sugar and lemon juice into a small pot and on medium heat bring to boil. Reduce heat stirring occasionally to avoid burning, cook for about 5 minutes until the mixture thickens. Leave mixture to cool and place into a blender or use a hand held grinder to blend mixture, unused jam can can be stored for future use. 

Beat egg, vanilla and cinnamon in a bowl, stir in milk. If using a firmer bread such as the whole wheat or Ezekiel you may want to double up on the liquid ingredients (eggs, vanilla extract and milk).

Next heat a nonstick griddle/skillet, (I use my regular frying pan), whilst this is heating dips bread slice into egg mixture ensuring that both sides are coated well. Heat should be medium, melt 1 tablespoon butter in pan. Using a spatula place dipped bread slice into pan, cook until browned on each side, repeat for each slice. 

Whip the cream cheese mixture until softened, sift in icing sugar and continue whipping. Add flavouring and milk and mix until a smooth consistency. 

For serving place filling mixture onto one half of the french toast with a drizzle of blueberry jam, fold in half and dust with icing sugar for finishing touches.
